The jam cake is a soft and simple dessert that can be prepared in just a few minutes and is perfect for using that open jar of jam sitting in the fridge! You can serve this simple cake for breakfast or a snack. It stays soft for days (if it lasts that long!), I used raspberry jam, but you can use any flavor you like! Ingredients for the Jam Cake
- 2 eggs (XL size)
- 1 3/4 cups all-purpose flour
- 1/3 cup low-fat milk (must be cold from the fridge)
- 1/2 cup raspberry jam (or other flavor you like)
- 1/4 cup sugar (or 2 tbsps of stevia if you prefer)
- 2 tbsps extra virgin olive oil
- 1/2 packet baking powder
- to taste powdered sugar

Preparation of the Jam Cake
In a bowl, pour the eggs, sugar, oil, and milk, and mix quickly with a spoon for 2 minutes.
In a separate bowl, sift and mix together the flour and baking powder.
Add the dry ingredients to the bowl with the liquid mixture and stir with a spoon for a few minutes until you get a smooth and lump-free mixture (it takes very little time, it’s very easy!).
Grease and flour the mold, pour the batter inside, and level it with a spatula, then spoon the jam over it.
Preheat the electric oven to 428°F.
Once the oven is hot, bake and cook for 30 minutes (towards the end of cooking, always do the toothpick test because ovens are not all the same), once the cake is cooked, take it out and let it cool outside the oven.
As the cake cools, it’s normal for it to sink where you placed the jam, once cool, remove it from the mold, sprinkle with powdered sugar, and serve!
