Ingredients for 5 Keto Buns

  • 130 g egg whites (pasteurized)
  • 80 g almond flour
  • 20 g coconut oil
  • 1 teaspoon instant yeast for savory preparations
  • 1 pinch fine salt

Preparation of Keto Buns!

  • Pour the pasteurized egg whites and a pinch of salt into a bowl, whip them to stiff peaks with electric whisks, then set aside.

  • In another bowl, pour the almond flour, yeast, and melted coconut oil, quickly stir with a spoon.

  • Add the almond flour mixture to the bowl with the whipped egg whites and mix with a spoon from bottom to top (being careful not to deflate the egg whites) until you get a homogeneous mixture.

  • Preheat the oven to 350°F and meanwhile, line the baking sheet with parchment paper, drop the mixture by spoonfuls forming 5 distinct heaps (I slightly flattened them, but you can leave them unflattened) and bake, cook for 20 minutes, then remove, let cool and enjoy!

TIPS

Before baking the keto buns, you can add sesame seeds on top, and if you like, also sage pieces or pepper.

I slightly flattened the dough heaps to give them the shape of focaccias, but you can leave them unflattened, and you’ll get more round buns.

You can enjoy them with both savory and sweet foods.
