Ingredients for Keto Coconut Cookies

  • 2 eggs (XL size)
  • 2 cups coconut flour
  • 2 tbps stevia

Preparation of Keto Coconut Cookies

  • In a bowl, pour the eggs and stevia, work with the electric whisks for 5/6 minutes until you obtain a whipped and foamy mixture.

  • Add the coconut flour and after putting on gloves, knead with your hands until you get a homogeneous and firm dough.

  • Prepare the baking sheet with a sheet of baking paper, take (always wearing gloves) pieces of dough (more or less the same size) and by passing it between your hands make small balls, place them on the baking paper and press slightly in the center.

  • Preheat the oven to 428°F and when it reaches the temperature, bake the coconut cookies, cook for 15 minutes (at the end of cooking they should be nicely golden), then remove from the oven and let them cool completely before touching them, once cool enjoy them!

Tips

You can add 30 g of chopped hazelnuts to the keto coconut cookie dough.

You can also add 40 g of dark chocolate pieces.

Once cooled you can also add melted dark chocolate.

As dark chocolate I recommend 100%
