  • 7.5 oz mascarpone
  • 3/4 cup almond flour
  • 1/3 cup coconut flour (for the dough)
  • 2 tbsp coconut flour (for rolling after prepared)
  • 1.5 tbsp stevia

Preparation of Keto No-Bake Sweet Truffles

  • In a glass bowl, place the mascarpone and stevia, and mix with a spoon until creamy.

  • Add the almond flour, coconut flour (the 1/3 cup), and pistachio granules to the bowl, mix well with the spoon until the mixture is homogeneous and well blended.

  • Put on kitchen gloves and take small portions of the mixture (about 20g each), roll them between your hands to form balls, and roll them in the remaining coconut flour.

  • Place the keto sweet truffles in the previously used bowl, cover with plastic wrap, and let them rest in the fridge for at least 2 hours. After resting, enjoy these small pearls of goodness!
