- 7.5 oz mascarpone
- 3/4 cup almond flour
- 1/3 cup coconut flour (for the dough)
- 2 tbsp coconut flour (for rolling after prepared)
- 1.5 tbsp stevia

Preparation of Keto No-Bake Sweet Truffles
In a glass bowl, place the mascarpone and stevia, and mix with a spoon until creamy.
Add the almond flour, coconut flour (the 1/3 cup), and pistachio granules to the bowl, mix well with the spoon until the mixture is homogeneous and well blended.
Put on kitchen gloves and take small portions of the mixture (about 20g each), roll them between your hands to form balls, and roll them in the remaining coconut flour.
Place the keto sweet truffles in the previously used bowl, cover with plastic wrap, and let them rest in the fridge for at least 2 hours. After resting, enjoy these small pearls of goodness!

You can roll the truffles in unsweetened cocoa powder instead of coconut after forming them.
