Lamb’s lettuce salad, a fresh and flavorful salad, great in summer to help combat the heat, perfect also to eat at the office or as a filling for a vegan sandwich that everyone will enjoy! I don’t know about you, but I especially love mixed salads of all kinds and colors in the summer, and this lamb’s lettuce salad is one of my favorites, try it too!

Ingredients for the Lamb’s Lettuce Salad
- 14 oz lamb's lettuce
- 1 cup canned cannellini beans (drained weight)
- 1 cup cooked chickpeas (drained weight)
- 1 oz sliced almonds
- 0.5 oz pine nuts
- 2 tbsps apple cider vinegar
- 1 tbsp extra virgin olive oil
- to taste fine salt
Preparation of the Lamb’s Lettuce Salad
Wash the lamb’s lettuce and let it drain well, set aside.
In a bowl, place the drained cannellini beans and chickpeas, add the sliced almonds and pine nuts, add vinegar, oil, and salt, and mix well.
Finally, add the well-drained lamb’s lettuce, mix until all ingredients are well combined, and enjoy immediately or cover with plastic wrap and store in the fridge until serving time.
