Ingredients for lemon cod fillets
- 12 oz cod fillets (thawed before use)
- as needed low glycemic index flour (to coat the fillets before cooking)
- 1/2 lemon (untreated, juice and zest)
- 1 tsp extra virgin olive oil
- 2 tbsps water
- 1 pinch fine salt
- as needed chopped parsley (fresh)

Recipe Preparation
Thaw the cod fillets, once thawed pat them dry with paper towels and coat them in flour, making sure to cover all sides, then place them in the pan.
Wash the lemon, cut it in half, and squeeze the juice of one half into the pan along with the grated zest, add a pinch of fine salt, the oil, and water, and cover with the lid.
Cook over high heat for 15/20 minutes, during the last few minutes, feel free to remove the lid. Once the lemon cod fillets are cooked, serve them with a sprinkle of fresh chopped parsley on top and enjoy your meal!
