Ingredients for the Lemon Donuts
- 1 egg
- zest of 1 lemon (grated, untreated lemon peel)
- 1 1/4 cups all-purpose flour
- 7/16 cup water
- 1 1/2 tbsps stevia (or 1/4 cup sugar)
- 1 tbsp extra virgin olive oil
- 1 tsp baking powder for desserts

Preparation of Lemon Donuts
In a bowl, pour the egg, water, stevia (or sugar), and oil, and beat vigorously with a spoon until you get a homogeneous emulsion.
Add the grated peel of an untreated lemon and mix it with the rest.
In a separate bowl, mix flour and baking powder by sifting them, then add them to the bowl with the liquids and mix with a spoon until you get a very soft and lump-free batter.
Oil and flour the donut mold, spoon the batter into it (the doses are perfect for 6 donuts), and gently tap the pan on the table to level the batter well.
Heat the oven to 428°F and once hot, bake and cook for 25 minutes, once cooked remove the lemon donuts from the oven.
Before removing the donuts from the mold, wait until they have completely cooled, once cooled, remove them from the mold and serve, perhaps accompanying them with a slice of fresh lemon and some mint leaves!
