I often prepare them this way, and in addition to being quick to make, the use of curry ensures that the broccoli smell is hardly noticeable at home! Ingredients for Light Curried Broccoli
- 1.76 lbs broccoli (green, weighed when cleaned)
- 2 tbsp curry (powder)
- 8.5 cups water
- 1 pinch coarse salt
- 2 tbsp extra virgin olive oil
- to taste fine salt
- to taste mixed peppercorns (freshly ground)
Preparation of Light Curried Broccoli
Clean the broccoli from waste parts, divide them into single florets, wash them well and drain.
Place the broccoli florets in a pot and cover with plenty of slightly salted water, add the curry powder and stir with a wooden spoon, put on high heat and once it starts boiling, cook for 30/35 minutes.
Once the broccoli are cooked (just pierce them with a fork, if it goes through, they are done), drain them well and place them in a bowl, season with a pinch of salt (taste to salt according to your preference), oil, and freshly ground pepper, mix gently and serve!
Anti-Waste Tip
You can drain the cooking water into an empty pot and then use it as broth for a tasty soup!
Variations
If you want to make the curried broccoli even more flavorful, you can replace the regular oil with garlic oil or chili oil. If you like, you can also add some anchovies in oil, but in this case, it will be a bit less light!
