Light Tuna and Bell Pepper Pasta

Light tuna and bell pepper pasta is ideal for those who want to eat healthy and light but with flavor, without any fat even raw, also perfect for a quick meal, good hot or cold and therefore great to eat even at the office if needed! But now go try this light and easy first course!

Ingredients for Light Tuna and Bell Pepper Pasta

  • 2 oz fusilli
  • 4.4 oz canned tuna in water (weight already drained)
  • 7 oz red bell pepper (weighed already cleaned)
  • 1 clove red garlic
  • 1/2 glass water
  • 1 tbsp parsley (freshly chopped)
  • 1 pinch fine salt

Preparation of Light Tuna and Bell Pepper Pasta

  • Clean the bell peppers, remove the stem, seeds, and white filaments, wash them, dry them well. Then cut them into strips and small pieces, pour into a nonstick pan.

  • Add a pinch of salt, the chopped garlic clove, and the half glass of water, stir and cook covered on medium heat for about 10 minutes.

  • While the peppers start cooking, put the water for the pasta on the stove and when it boils, add the pasta, continue cooking the sauce.

  • Add the coarsely chopped tuna along with the parsley to the peppers, stir and continue cooking on high heat without a lid for another 5 minutes, then turn off.

  • Drain the pasta al dente, pour it into the pan with the sauce and toss it over medium heat for 2 minutes, stirring, serve immediately hot and steaming!

  • Optional: if desired, before serving you can add 1 teaspoon of raw olive oil.
