- 1 3/4 cups all-purpose flour
- 2 eggs (XL size)
- 2 tbsps stevia (or 1/2 cup sugar)
- 2 tbsps extra virgin olive oil
- 1/2 packet baking powder
- 1/2 cup water

Preparation of the Light Water Ring Cake
In a bowl, pour the eggs, stevia (or sugar), olive oil, and water, and mix quickly with a spoon (or a hand whisk).
Sift the flour with the baking powder into the liquid mixture, then mix energetically with a spoon (or a hand whisk) until you obtain a homogeneous lump-free mixture.
Lightly oil and flour the pan, pour the mixture inside, preheat the oven to 392°F and once hot, bake.
Bake the light water ring cake for 35 minutes, always checking with the toothpick test towards the end of baking, and once it’s cooked, take it out, let it cool completely, remove it from the pan, and enjoy!
