Ingredients for the low carb cloud cake

  • 2 cups cups 0% fat Greek yogurt
  • 1/4 cup cup stevia
  • 2 eggs (medium size)
  • 1/4 cup cup low glycemic index flour (Molino Spadoni specialized low glycemic index nutrition)
  • lemon zest (from 1 organic lemon with edible peel)

Preparation of the low carb cloud cake

  • In the bowl, pour the yogurt, eggs, and stevia, and use a spoon to mix until you get a very creamy and uniform mixture (you’ll see the yogurt will dissolve perfectly).

  • Grate and add the grated lemon zest, and blend it into the rest of the mixture.

  • Now pour the low glycemic index flour and mix from the bottom up until it is well combined and the mixture is homogeneous.

  • Cut the baking paper to the size of the bottom of the pan and place it inside the pan (this helps to release it more easily once cold).

  • Preheat the static oven to 350°F and in the meantime pour the mixture into the pan. Once the oven is hot, bake the cloud cake and cook for 45/50 minutes; once cooked, remove it from the oven and let it cool completely.

  • While baking, you will see it rise a lot, forming a dome, then just like soufflés, as it cools down, it will settle down on itself, and when it is completely cold, it will have a small edge on the surface that makes it perfect to be filled if desired.

TIPS

The low carb cloud cake is a dessert that should be stored in the fridge covered with plastic wrap (obviously when it is completely cold).

You can enjoy it plain or top it with blueberries and other fresh fruits you like.
