Good both on their own and filled in a savory version, for example with cured ham and vegetables or vegetables and cheese! Great as a substitute for classic yeast-based breads.

Ingredients for Low Glycemic Index Flour Rolls

  • 2 cups low glycemic index flour
  • 1/2 cup water
  • 1 tbsp extra virgin olive oil
  • 1/3 tsp fine salt
  • 1 tsp instant yeast for savory preparations

Preparation of Low Glycemic Index Flour Rolls

  • In a bowl, pour the flour, salt, and yeast and quickly mix with the spoon.

  • Add the water and oil to the bowl and start mixing with the spoon. Once the water begins to be absorbed, pour the dough onto a lightly floured work surface.

  • Knead the dough for 5/6 minutes until you get a smooth and compact dough. Then divide the dough into 3 equal parts, shape each part into a round shape, flatten slightly, and place the rolls on a baking sheet lined with parchment paper.

  • Preheat the oven to 350°F and once it reaches temperature, bake the rolls. Cook for 30/35 minutes. Once cooked, take them out, let them cool, and enjoy them plain or filled!

  • At the end of baking, the low glycemic index flour rolls should be slightly golden on the surface.
