Good both on their own and filled in a savory version, for example with cured ham and vegetables or vegetables and cheese! Great as a substitute for classic yeast-based breads.

Ingredients for Low Glycemic Index Flour Rolls
- 2 cups low glycemic index flour
- 1/2 cup water
- 1 tbsp extra virgin olive oil
- 1/3 tsp fine salt
- 1 tsp instant yeast for savory preparations

Preparation of Low Glycemic Index Flour Rolls
In a bowl, pour the flour, salt, and yeast and quickly mix with the spoon.
Add the water and oil to the bowl and start mixing with the spoon. Once the water begins to be absorbed, pour the dough onto a lightly floured work surface.
Knead the dough for 5/6 minutes until you get a smooth and compact dough. Then divide the dough into 3 equal parts, shape each part into a round shape, flatten slightly, and place the rolls on a baking sheet lined with parchment paper.
Preheat the oven to 350°F and once it reaches temperature, bake the rolls. Cook for 30/35 minutes. Once cooked, take them out, let them cool, and enjoy them plain or filled!
At the end of baking, the low glycemic index flour rolls should be slightly golden on the surface.
