Marinated fresh cheese is easy to prepare and you can use it as an appetizer, aperitif, or a main course. You prepare it in a few minutes and then let it marinate in the fridge! Delicious on its own, but also great as an addition to vegetable salads or pasta or rice salads. Ingredients for Marinated Fresh Cheese
- 6.3 oz fresh cheese
- 2 tbsps apple cider vinegar
- 1 tbsp extra virgin olive oil
- 2 tsps chives (dried)
- 1 tsp basil (dried)
- 1 pinch fine salt
- 1 pinch mixed peppercorns (to grind fresh)

Steps to Prepare Marinated Fresh Cheese
First, drain the fresh cheese from its preserving liquid and pat it dry with paper towels.
Cut the fresh cheese first into strips then into pieces and place them in a bowl.
In a small bowl, pour the oil, vinegar, salt, pepper, chives, and basil and mix quickly until an emulsion is created.
Pour the emulsion over the fresh cheese and mix well with two tablespoons, cover with plastic wrap, and place it in the fridge to marinate for at least 4 hours.
After the marinating time in the fridge, remove the plastic wrap, give it a good stir and serve as you like: on its own (for appetizers and aperitifs or as a main course) or as an addition to salads or cold summer dishes.
Serve the marinated fresh cheese with its remaining marinade (most of it is absorbed by the cheese).
TIPS
If you want to serve the marinated fresh cheese as a snack for aperitif or appetizer, I recommend serving it in small colorful bowls, you’ll make a great impression!
