Steps to Prepare Marinated Primo Sale

  • First, drain the Primo Sale from its brine and pat it well with paper towels.

  • Cut the Primo Sale first into strips and then into pieces and place them in a bowl.

  • In a small bowl, pour the oil, vinegar, salt, pepper, chives, and basil, and mix quickly to create an emulsion.

  • Pour the emulsion over the Primo Sale and mix well with two spoons. Cover with plastic wrap and place in the fridge to marinate for at least 4 hours.

  • After the marinating time in the fridge, remove the plastic wrap, give it a good stir, and serve as you like: on its own (for appetizers and aperitifs or as a second course) or as an addition to salads or cold summer main dishes.

  • Serve the marinated Primo Sale with its remaining marinade (most is absorbed by the cheese).
