Marinated Zucchini

The marinated zucchini are an easy, light, and very tasty side dish, ideal to eat in any season but especially in the summer because they are super fresh! You can serve them as an appetizer or as a side dish or use them to stuff pizzas and sandwiches! I prepared them with a cast iron grill pan, but if you have a barbecue or oven on, that works too to “cook” them! But now, enough talk and hurry up to try the recipe that will be a hit!

Ingredients for Marinated Zucchini

  • 2 zucchini (approximately 380 g when cleaned)
  • 1/2 lemon (with edible peel (zest and juice))
  • 2 tablespoons extra virgin olive oil
  • 6 leaves mint (fresh)
  • 1 bunch parsley (fresh)
  • to taste black pepper (freshly ground)
  • to taste fine salt (just a pinch)

Preparing Marinated Zucchini

  • Clean the zucchini from any waste parts, wash them, and dry them. Then slice them thinly lengthwise.

  • Place the cast iron grill pan on the stovetop over high heat, and when it’s hot, grill the zucchini for a few minutes on each side, turning them with tongs halfway through cooking. Once cooked, place them on a plate to cool. Continue until all are done (for these quantities, it takes about 20 minutes).

  • While the zucchini cool, prepare the marinade: in a bowl, pour the juice and grated zest of half a lemon (with edible peel), the oil, salt, pepper, chopped mint, and parsley. Stir with a spoon until you get a nice emulsion.

  • Once the zucchini are well chilled, pour the marinade over them, mix well, cover with plastic wrap and let rest in the fridge for at least 1 hour before serving.

  • Take the marinated zucchini out of the fridge 10 minutes before serving, mix again, and serve!
