Ingredients for the Mediterranean flatbread without rising
- 2 1/2 cups all-purpose flour
- 7/8 cup water (at room temperature)
- 2 tbsp extra virgin olive oil
- 3/4 tsp fine salt
- 1 packet instant yeast for savory preparations
- 1 1/4 cups cherry tomatoes
- 3/4 cup black olives (pitted)
- 1 golden onion
- 1 pinch fine salt

Preparation and cooking of the Mediterranean flatbread without rising
In the bowl of the stand mixer, pour the ingredients in the following order: flour, salt, yeast, water, and oil. Attach the bowl to the machine, insert the dough hook, and operate at speed 2 for 8 minutes.
With the help of a kitchen spatula, take the dough out of the bowl and transfer it onto the floured board. Put on the appropriate gloves and with the help of the dough scraper (it’s a very soft dough!) and your hands, shape it into a ball (it takes a few seconds).
Lightly oil the baking pan, spread the dough inside, and stretch it with your hands to reach the edges.
Season the flatbread with pitted and drained black olives, halved cherry tomatoes, and thinly sliced onion, distributing everything evenly. Season with salt and plenty of oil.
Turn the oven on to 428°F and when it’s at temperature, bake the flatbread and cook for 30 minutes. Then remove from the oven, plate, and enjoy the Mediterranean flatbread hot and steaming!
Variants
Instead of pitted black olives, you can use Taggiasca olives.
You can also add chili pepper to the seasoning if you like.
