Ingredients for Mediterranean Focaccia Without Leavening
- 2 1/4 cups all-purpose flour
- 3/4 cup water (at room temperature)
- 1 tbsp extra virgin olive oil
- 3/4 tsp fine salt
- 1 packet instant yeast for savory preparations
- 8.8 oz cherry tomatoes
- 4.2 oz black olives (pitted)
- 1 yellow onion
- 1 pinch fine salt

Preparation and Cooking of Mediterranean Focaccia Without Leavening
In the stand mixer’s bowl, pour the ingredients in the following order: flour, salt, yeast, water, and oil. Attach the bowl to the machine body, insert the dough hook, and set to speed 2 for 8 minutes.
With the help of a kitchen spatula, take the dough out of the bowl and place it on a floured pastry board. Put on the appropriate gloves and, with the help of a scraper (it’s a very soft dough!) and your hands, shape it into a ball (it takes just a few seconds).
Lightly oil the baking pan, spread the dough inside, stretching it with your hands until it reaches the edges.
Season the focaccia with the pitted and drained black olives, halved cherry tomatoes, and thinly sliced onion. Distribute everything evenly, season with salt and abundant oil.
Preheat the oven to 428°F and when it reaches temperature, bake the focaccia and cook for 30 minutes, then remove, plate, and enjoy the Mediterranean focaccia hot and steaming!
Variations
Instead of pitted black olives, you can use Taggiasca olives.
You can also add chili pepper to the seasoning if you like.
