Ingredients for the Stracciatella Cake
- 2 1/4 cups all-purpose flour
- 3/4 cup potato starch
- 2 eggs (size XL)
- 1 1/16 cup mascarpone
- 3/4 cup granulated sugar
- 2/3 cup milk
- 1/2 cup dark chocolate chips
- 1 packet baking powder
- as needed extra virgin olive oil
- as needed all-purpose flour

I used a stand mixer, but as you will see from the tools, I have also suggested an electric whisk and a bowl as alternatives.

Preparation of the Melt-in-your-Mouth Stracciatella Cake!
In the bowl of the stand mixer, pour eggs and sugar, attach the whisk tool and set to speed 4 for 2 minutes (same procedure if using whisks and a bowl), then turn off.
Now add the mascarpone and set to speed 4 for 4 minutes, then add the milk and continue at the same speed for another 2 minutes, then turn off.
Now pour the flour, starch, and baking powder into the bowl, set to speed 2 for 4 minutes, then turn off (at this point you will have a soft and smooth mixture).
Pour the chocolate chips into the mixer, set to speed 2 for 2 minutes and turn off, it’s done!
Grease and lightly flour a 9 1/2-inch round pan, using a silicone spatula, pour the batter inside and level the surface.
Turn on the electric oven to 428°F and once hot, bake and cook for 30 minutes, towards the end of cooking always do the toothpick test as every oven is different, once cooked, remove from the oven and let it cool before removing from the pan!
