Oven-baked lamb, a classic recipe from Italian country tradition, a dish that symbolizes tradition on Easter tables but is also enjoyed throughout the year. Ingredients for Oven-Baked Lamb
- 6 lamb chops (total weight of 450 g, medium thickness cut)
- 3 cloves red garlic
- 3 sprigs rosemary
- 2 tablespoons extra virgin olive oil
- 1 to taste salt
- 1 to taste mixed peppercorns (freshly ground)

Recipe Preparation
Salt the lamb chops on both sides and place them in a non-stick baking tray.
Add freshly ground pepper, rosemary, and cleaned chopped garlic on top.
Drizzle with the oil provided in the recipe and bake in a preheated oven at 482°F, cook for 20 minutes but always check the cooking according to your taste and the thickness of the chops.
Serve hot accompanied by the side dish you prefer, either classic potatoes or a nice salad; for example, I love to serve it with Valerian (I simply season it with a pinch of salt and a drizzle of oil) as shown here in the photo!

ADVICE
If you want to keep the lamb warm and at the same time tender while waiting to serve it, you can store it in the oven at the lowest setting covered with parchment paper. You can also serve it with a citronette made with oil and lemon and/or orange, I personally don’t like to add it and serve it on the side; you can also accompany it with simple slices of lemon.
