Ingredients for Oven-Breaded Cod Fillets

  • 14 oz cod fillets (5 pieces)
  • 2 eggs
  • 1/3 cup flour (I used a low glycemic index one)
  • 2/3 cup breadcrumbs
  • 1 teaspoon sweet paprika
  • to taste fine salt
  • 2 tablespoons extra virgin olive oil

Preparation of Oven-Breaded Cod Fillets

  • Thaw the cod fillets, for example, take them out of the freezer the night before to prepare them the next morning. Once the fish is thawed, proceed with the recipe.

  • In a bowl, beat the eggs with a pinch of salt, prepare two sheets of parchment paper, one with flour and one with breadcrumbs mixed with paprika and a pinch of salt.

  • Dip each cod fillet first in flour, then in beaten egg, and finally in breadcrumbs, making sure to coat all sides well.

  • Place the breaded cod fillets on a baking tray lined with parchment paper, drizzle with oil, and preheat the oven to 428°F. Once hot, bake for 15 minutes. When cooked, remove the cod fillets and enjoy!

Tips

You can substitute sweet paprika with smoked or spicy paprika.

You can add garlic powder to the paprika.

You can replace the paprika with garlic and parsley.

You can add grated untreated lemon zest to the breadcrumbs.

Instead of low glycemic index flour, you can use all-purpose flour, whole wheat flour, or cereal flour.
