Overnight Coconut and Cocoa Porridge

Have you ever tried overnight porridge? I have, and I swear I love it and make a thousand different versions. Today I’m introducing you to the overnight coconut and cocoa porridge! You should know that I call overnight porridge the “lazy breakfast” because you can prepare it the day before, and in the morning, it’s ready while you might still be half asleep! I prepare it in convenient single-portion jars, so everyone has their breakfast ready! This particular version I call “yogoporridge” because I use more yogurt than milk as the base, but I’ll soon post all the delicious versions I prepare—and I forgot to mention that the overnight porridge I make is also sugar-free!

Ingredients for the overnight coconut and cocoa porridge

  • 1/2 cup rolled oats
  • 1/2 cup 0% fat Greek yogurt
  • 1/4 cup cow milk (or other plant-based drink)
  • 1 tbsp chia seeds
  • 1/8 tsp stevia (optional)
  • to taste unsweetened cocoa powder
  • to taste coconut flakes (unsweetened)

Preparation of the overnight coconut and cocoa porridge

  • Place the empty jar on the scale and tare it to 0.

  • Add the ingredients in this order: yogurt, milk, stevia (optional), rolled oats, and chia seeds. Mix with a spoon until you get a homogeneous mixture.

  • Close the jar and place it in the fridge overnight. You can prepare it the evening before dinner, but it’s also fine if you prepare it in the afternoon if you have time. It needs to stay in the fridge for at least 8 hours, but the longer it stays, I assure you, the better it will taste!

  • When it’s time for breakfast, open the jar, dust with plenty of unsweetened cocoa powder, add an abundant amount of dried coconut flakes (which are typically unsweetened), and enjoy this wonderful overnight porridge in all its goodness!
