Ingredients for Pan-Fried Roasted Potatoes

  • 2 lbs yellow potatoes (weighed already peeled)
  • 2 tablespoons extra virgin olive oil
  • 1 clove red garlic
  • 1 pinch fine salt

Preparation of Pan-Fried Roasted Potatoes

  • Peel the potatoes, wash them well, cut them into small cubes and put them in a bowl, cover them with cold water and let them rest this way for 15 minutes (a trick to keep them crispy on the outside and soft on the inside!).

  • After the 15 minutes of soaking, drain the potatoes and pat them dry with a paper towel (or alternatively with a clean dish towel).

  • Peel the garlic clove and put it in the pan with the oil, heat over medium heat and add the potatoes, salt and stir, let them cook over medium heat for about 30 minutes, stirring occasionally (if you see that they slightly stick to the bottom of the pan, don’t worry, it’s part of the normal process).

  • For the last 10 minutes, cook on high heat, stirring often, the pan-fried roasted potatoes are ready when they’ve formed that delicious crust! Serve them hot and steaming, they’ll be a hit and you’ll be licking your chops!
