Pasta with Zucchini and Bacon

Pasta with zucchini and bacon (or diced cooked ham for a lighter version), a very simple but delicious first course, perfect to prepare even when you’re short on time! The pasta zucchini and bacon is also perfect for lunches or dinners with friends! Too good and too delicious not to try!

Ingredients for Pasta with Zucchini and Bacon

  • 7 oz zucchini
  • 5 oz smoked bacon (diced)
  • 5.6 oz pasta (recommend casarecce type pasta)
  • 1 tbsp extra virgin olive oil
  • to taste fine salt
  • to taste mixed peppercorns (freshly ground)
  • 1 tbsp water

Preparation of Pasta with Zucchini and Bacon

  • Clean the zucchini of any unusable parts, wash and dry it, cut it into strips and then into small pieces, put it in the pan, add the oil, a pinch of salt, stir, and cook over medium heat for 5 minutes, stirring.

  • After 5 minutes, add the diced bacon to the pan, continue cooking for another 10 minutes, stirring occasionally, then turn off the heat.

  • From the pan, take 2 tablespoons of zucchini and finely chop them with a knife (or blend them) and put them back in the pan; this is the trick that will make the pasta super creamy without using cream!

  • Then cook the pasta in plenty of salted water, drain it al dente, put it in the pan, and mix it with the sauce over medium heat, stirring for 3/4 minutes, then serve hot and steaming, and enjoy your meal!

Tips

In this recipe, the bacon remains very soft; if you prefer it crispier, I suggest browning it in a separate pan and adding it at the end before serving!

If you like, you can also add grated cheese or pecorino before serving!
