  • 1/2 glass light beer

Steps to Prepare Pork Loin with Cherry Tomatoes and Crispy Speck

  • Start by placing the pork loin slices in a large non-stick pan, lightly salt them, and distribute the cherry tomatoes (washed and dried) cut in half over them. Lightly salt the tomatoes as well, add the oil, cover with a lid, and place on the stove over medium heat to cook.

  • While the pork loin is starting to cook, cut the speck into strips and then into small pieces. Place it in a non-stick pan, put it on low heat, and stir until it’s nice and crispy. Once done, turn off the heat and place the speck on paper towels to drain and remain crispy.

  • When the pork loin is halfway through cooking, remove the lid, pour in the beer, and increase the heat. Let it cook, stirring occasionally, until the beer has evaporated and only a nice sauce created by the tomatoes remains. Then serve it hot, placing the previously prepared crispy speck on top.
