  • 18 oz cherry tomatoes
  • 5 oz speck slices (thin)
  • 1/4 cup light beer
  • 1 tbsp extra virgin olive oil

Steps to Prepare Pork Loin with Cherry Tomatoes and Crispy Speck

  • Start by placing the pork loin slices in a large non-stick pan, lightly salt them, and distribute the halved cherry tomatoes (washed and dried) on top. Lightly salt them as well, add the oil, cover with a lid, and place on the stovetop over medium heat to cook.

  • Meanwhile, while the pork loin begins to cook, cut the speck into thin strips and then into small pieces, place it in a non-stick pan, set over low heat, and stir until it is crispy. Then turn off the heat and place the speck on paper towels to drain and remain crispy.

  • When the pork loin is halfway cooked, remove the lid, pour in the beer, and increase the heat. Let it cook, stirring occasionally, until the beer has evaporated and only a nice sauce created by the cherry tomatoes remains. Then serve hot, topping with the previously prepared crispy speck.

Variations
