Puff Pastry and Zucchini Swirls

Ingredients for the puff pastry and zucchini swirls

  • 1 sheet puff pastry (rectangular)
  • 1 zucchini (medium size (about 200 grams))
  • 1 teaspoon extra virgin olive oil
  • 1 pinch fine salt
  • to taste mixed peppercorns (freshly ground and quantity according to your taste)

Preparation of the puff pastry and zucchini swirls

  • Wash the zucchini, remove any waste parts and grate it with a wide-tooth grater, then place the grated zucchini in a bowl, season with salt, pepper, and oil, mix.

  • Unroll the puff pastry on the work surface, spread the zucchini on top making sure to drain them well, distribute evenly, then roll from the long side to form a log, cut into 20 swirls of equal width (I made them 0.4 inches wide).

  • Place the swirls on a baking sheet lined with parchment paper, well spaced apart, preheat the oven to 428°F and when it is hot, bake, cook for about 35 minutes or until the swirls are golden brown (cooking times vary from oven to oven, they are not all the same!), once cooked, remove them from the oven and serve, excellent both hot and cold!
