Ingredients
- 2 lbs Pumpkin (already peeled)
- 5.5 oz Smoked bacon (diced)
- 3 tbsps Breadcrumbs
- 3 tbsps Extra virgin olive oil
- 1 cup Rosemary
- 1 g Fine salt
- 1 to taste Mixed peppercorns (freshly ground)

Preparing the Pumpkin Gratin with Bacon
Peel the pumpkin, cut it into cubes, and wash it well.
Place the pumpkin in the non-stick baking sheet, add the smoked bacon, oil, salt, pepper, and rosemary, and mix well.
Sprinkle the top with breadcrumbs mixed with a pinch of salt, and give one last drizzle of oil.
Bake in a preheated oven at 482°F, cook for 1 hour in a static oven, and for the last 5 minutes, turn on the grill to get a nicely golden surface.
You can serve the pumpkin gratin with bacon hot and steaming, perfect to accompany your meat main courses!
VARIATIONS
Instead of smoked bacon, you can use sliced speck or diced ham or pieces of sausage.
You can replace 100 g of pumpkin with 100 g of boiled potato.
