Ingredients for the Rich Farro Salad
- 17 oz pearl farro, cooked, boiled (canned farro works great!)
- 3.5 oz cooked ham (a thick slice)
- 6 oz cherry mozzarella balls
- 5 oz cherry tomatoes
- 5 oz black olives in brine (pitted)
- 5 leaves basil (fresh)
- 2 tbsps extra virgin olive oil
- 1 pinch salt
Preparation of the Rich Farro Salad
Drain the precooked farro well, pour it into a large bowl, add the cherry tomatoes washed and cut into 4 parts, mix.
Cut the mozzarella balls in half and add them to the bowl, also add the cooked ham cut into small cubes and the olives chopped with a knife.
Add the basil washed, dried and torn with your hands, the salt and the oil, and mix well, combining all the ingredients, cover with plastic wrap and place in the fridge for at least 30 minutes before serving.

Notes
This recipe uses precooked farro (very convenient, always available, and delicious as well as practical for those who work and have little time) but you can certainly use farro to cook from scratch if you have the time and desire!
You can substitute the mozzarella balls with Greek feta.
