Rich spelt salad, a fresh salad rich in ingredients, tasty and perfect for hot summer days. Prepare it and have lunch ready in the fridge for two days, to be eaten at home or in the office. It will delight both adults and children, and it’s a great alternative to the classic rice salad!

Ingredients for the Rich Spelt Salad

  • 17 oz pearl spelt, cooked, boiled (canned spelt works great!)
  • 3.5 oz cooked ham (one thick slice)
  • 6.2 oz cherry mozzarella balls
  • 5.3 oz cherry tomatoes
  • 5.3 oz black olives in brine (pitted)
  • 5 leaves basil (fresh)
  • 2 tbsps extra virgin olive oil
  • 1 pinch salt

Preparation of the Rich Spelt Salad

  • Drain the pre-cooked spelt well, place it in a large bowl, add the washed cherry tomatoes cut into quarters, and mix.

  • Cut the mozzarella balls in half and add them to the bowl, also add the diced cooked ham and the chopped olives.

  • Add the washed, dried, and hand-torn basil, the salt, and the oil, and mix well to combine all the ingredients. Cover with plastic wrap and place in the fridge for at least 30 minutes before serving.

Notes

This recipe uses pre-cooked spelt (very convenient, always available, and delicious as well as practical for those who work and have little time), but nothing prevents you from using raw spelt that needs to be cooked if you have the time and desire!

You can substitute the mozzarella balls with Greek feta.
