Preparation of the Salmon and Peach Club Sandwich

  • Start by heating the cast iron grill pan well, and when it is very hot, grill the American bread for 2 minutes on each side for each slice until you get 3 well-toasted slices, set aside and prepare the filling.

  • Take the Greek yogurt, add the oil, a pinch of salt, and freshly ground pepper (in the quantity you prefer!), mix well until you get a creamy and well-blended sauce.

  • Take the grilled bread, put 2 generous teaspoons of sauce on the surface, add the smoked salmon, on top of the salmon add thinly sliced tomato, a pinch of salt, and torn basil leaves.

  • Take a second slice of bread, spread it on both sides with yogurt sauce and place it on top of the layer with salmon and tomato, add more smoked salmon on top, thinly sliced peach, again a pinch of salt and torn basil, close the club sandwich with the last slice of bread spread with sauce on one side only.

  • Insert a cocktail toothpick at two opposite corners, then cut diagonally (into triangles) to get two salmon and peach club sandwiches, serve and enjoy, bon appétit!

Tips

The salmon and peach club sandwich should be prepared and enjoyed immediately, if prepared in advance it risks becoming too soft.

If you still want to get a head start, you can prepare the individual parts in advance. Slice the peach and tomato and keep them in an airtight container in the fridge, make the sauce and store it in the fridge, finally toast the bread in advance, then just assemble everything when it’s time to eat!
