Tips for Hand Kneading
If you don’t have (or can’t use) a stand mixer, proceed as follows: take a large bowl and add the ingredients following the order described in the steps above (the order of adding the ingredients doesn’t change whether by hand or with a mixer), give a quick stir with a spoon and let it rest for 5 minutes (this allows the semolina to absorb the water, resulting in a soft and pliable dough), then transfer the dough onto a floured board and knead until you get a firm and compact dough without lumps, make a ball and put it in a bowl to rise, from here on proceed according to the instructions above.
