- 2 tbsps Breadcrumbs
- 1 to taste Soy or Cow Milk ((I used 4 tbsps))
- 1.4 oz Sliced Almonds ((you can easily find them in a bag))
- 7 oz Arugula
- 3 Champignon Mushrooms ((I used 3 fairly large ones))
- 1 to taste Mixed Peppercorns ((to grind fresh and dose to taste))
- 1 pinch Fine Salt
- 2 tsps Extra Virgin Olive Oil
Useful Tools to Make the Recipe
- 1 Food Processor
- 1 Spoon
- 1 Knife
- 1 Mandoline
- 1 Pan non-stick
- 1 Bowl (for serving the meatballs and salad)
- 1 Kitchen Scale
Preparation of Sausage Meatballs
First, soak the white bread in the milk.
In the food processor, add the sausages (after removing the skin), the well-squeezed white bread, and breadcrumbs, and run the processor for 3 minutes.
From the dough obtained, form 16 meatballs, give them a round shape and roll them in the sliced almonds to make them stick, place the meatballs in the pan.
Cook on medium heat for 10/15 minutes, gently turning the meatballs occasionally. In the end, they should be well cooked and the almonds toasted. They are ready to serve with the salad!
Wash the arugula well and let it drain.
Clean the champignon mushrooms well by removing the skin, clean the stems too, wash and dry them, then slice them thinly with the mandoline.
In a bowl, combine arugula and mushrooms, adjust salt and pepper, add the oil and mix well.
Plate by serving the salad in a bowl (I used a clay one) and place the sausage meatballs on top. Enjoy your meal!
