Ingredients for the Savory Appetizer Cookies

  • 1.5 cups all-purpose flour
  • 1.75 oz grated cheese (pecorino, parmesan, or other of your choice)
  • 2 tbsps extra virgin olive oil
  • 1 egg (XL size)
  • 3 tbsps water
  • 1 tsp instant baking powder for savory preparations
  • to taste black pepper (freshly ground)
  • 1 pinch fine salt

Preparation of Savory Appetizer Cookies

  • In a bowl, pour the flour, salt, baking powder, grated cheese, and pepper and mix quickly.

  • Add the egg, oil, and water to the bowl and start mixing with the spoon. Once the mixture becomes compact, transfer it to a floured work surface.

  • Knead on the work surface for a few minutes until you obtain a smooth and soft dough (similar in consistency to shortcrust pastry).

  • With the rolling pin, roll out the dough to a thickness of 1/5 inch, use the plunger cutter with a diameter of 1 inch to cut out the cookies, knead the scraps, roll out and cut again, continue this way until all the dough is used up.

  • Place the cookies on a baking tray lined with parchment paper (if necessary, bake in two separate batches), preheat the oven to 430°F.

  • Once the oven has reached temperature, bake the savory appetizer cookies, cook for 12 minutes, then remove them from the oven and let them cool.

  • Once the cookies are ready and cool, serve them in serving bowls and enjoy their goodness!
