  • 1 tbsp poppy seeds
  • 0.5 tsp fine salt
  • to taste mixed peppercorns (freshly ground)
  • to taste pomegranate seeds (for decoration)

  • Kitchen Scale
  • Plastic Wrap
  • Cookie Cutters
  • Parchment Paper

Let’s Make Savory Christmas Tree Cookies Together!

  • Cut the butter into pieces and let it soften; in the meantime, go to the next step!

  • Weigh all the ingredients and put them in the bowl of the stand mixer, also add the previously cut butter which will now be soft (so far it’s been super easy, and it will be until the end!).

  • Attach the paddle to the stand mixer, attach the bowl, and start at speed 3 for 5 minutes, voilà it’s done!

  • Pour the dough onto the lightly floured pastry board, shape it into a loaf, wrap it with plastic wrap, and then put it in the fridge for at least 2 hours (‘the longer it sits, the better you can work with this dough after!).

  • After chilling in the fridge, take the dough, roll it out with the rolling pin on the pastry board (flour if necessary) to a thickness of about 1/8 inch (you don’t have to go there with a ruler, just make sure it’s the same thickness everywhere!).

  • Now cut the cookies with the cookie cutters, re-kneading and rolling out the dough again if needed, you should obtain 24 cookies: 6 large, 6 medium/large, 6 medium, and 6 small ones to form the trees as seen in the picture.

  • Place the cut cookies on a baking sheet with parchment paper, heat the oven to 428°F and bake for 18 minutes, then turn off the oven, open it, and let them cool inside.

  • To serve the savory Christmas tree cookies, simply stack them starting with the largest cookie at the base and continue with the other three sizes, ending with the smallest one (as seen in the picture).

  • Serve by decorating with a few pomegranate seeds here and there for a perfect holiday mood!

Monica’s Tip!

If you want to make sure they don’t fall while you’re at the table, you can put a thin layer of spreadable cheese between each cookie when you prepare the trees!
