Ingredients for the Savory Cocktail Biscuits

  • 1 3/4 cups all-purpose flour
  • 1/2 cup grated cheese (pecorino, parmesan, or other of your choice)
  • 2 tbsps extra virgin olive oil
  • 1 egg (XL size)
  • 3 tbsps water
  • 1 tsp instant yeast for savory preparations
  • to taste black pepper (freshly ground)
  • 1 pinch fine salt

Preparation of the Savory Cocktail Biscuits

  • In a bowl, pour the flour, salt, yeast, grated cheese, pepper and mix quickly.

  • Add the egg, oil, and water to the bowl and start mixing with the spoon. Once the mixture becomes firm, place it on the floured kneading board.

  • Knead on the board for a few minutes until you obtain a smooth and soft dough (similar to shortcrust pastry).

  • With a rolling pin, roll out the dough to a thickness of about 1/5 inch, use the 1-inch plunger cutter to cut out the biscuits. Knead the scraps, roll out and cut again, continue this way until the dough is used up.

  • Place the biscuits on a baking sheet lined with parchment paper (if necessary, bake in two separate batches), preheat the oven to 428°F.

  • Once the oven reaches the temperature, bake the savory cocktail biscuits for 12 minutes, then remove them and let them cool.

  • Once the biscuits are ready and cooled, serve them in little serving bowls and enjoy their deliciousness!
