I rolled them in pistachio crumbs and poppy seeds, but you can roll them in paprika, chili pepper, if you like, pumpkin seeds, sesame seeds, or make a mix of everything; they are versatile and very eye-catching!

Ingredients for the Savory No-Bake Truffles

  • 3.9 oz mascarpone
  • 2 tablespoons mushroom cream (or truffle cream if you prefer a stronger taste)
  • 4 slices sandwich bread
  • 1.1 oz crackers (equivalent to 1 packet)
  • 1 teaspoon extra virgin olive oil
  • 1 pinch fine salt
  • to taste mixed peppercorns (freshly ground (I use plenty))
  • to taste pistachio crumbs
  • to taste poppy seeds

Preparation of Savory No-Bake Truffles

  • Place the sandwich bread and crackers in the food processor, chop for a few seconds (it really takes just a moment!), then pour into the bowl.

  • Add the mascarpone, oil, salt, pepper, and mushroom cream, put on the gloves, and start kneading with your hands until you get a homogeneous and compact mixture.

  • Divide the dough into 12 pieces the size of a walnut or 16/18 pieces the size of a hazelnut, whichever size you choose, make sure the pieces are of equal size, roll them into balls with your hands until you finish the mixture.

  • Pour the pistachio crumbs and poppy seeds (or another spice as suggested at the beginning) onto a small plate and roll the truffles in it until completely covered, place them on the serving plate, and enjoy them alone or with company!

Tips

If you want to prepare the savory no-bake truffles in advance, simply cover them with plastic wrap and store them in the fridge until ready to eat!

    Yes, you can replace the mascarpone with an equal amount of cream cheese or ricotta cheese. If using ricotta, add one more slice of sandwich bread!
