Savory Onion Pancakes

Savory onion pancakes are delicious little cakes with pieces of onion, perfect for use during aperitifs. These pancakes are delicious both on their own and stuffed with cold cuts or savory sauces like mayonnaise, tzatziki, and whatever you like best! Ingredients for Savory Onion Pancakes

  • 1 1/4 cups all-purpose flour
  • 1/2 cup water
  • 3 tablespoons freeze-dried red onion (generous)
  • 1 tablespoon extra virgin olive oil
  • 1 egg (XL size)
  • 3/4 teaspoon fine salt
  • 1 teaspoon instant yeast for savory preparations

Preparation of Savory Onion Pancakes

  • In a bowl, pour the egg, water, oil, and salt, and with a spoon, mix to create a homogeneous emulsion.

  • In a separate bowl, sift the flour, yeast, and onion, and mix well.

  • Add the powdered mixture to the liquid mixture bowl and mix vigorously with a spoon until you obtain a homogeneous and moderately thick batter.

  • Heat the pan over medium heat, and once hot, pour a ladle of batter at a time, cook for 2/3 minutes, then flip the pancake with a kitchen spatula and cook for another 2/3 minutes. Continue this way until you finish the batter.

  • As the pancakes are cooked, place them on a serving plate or in a tray with parchment paper. Once cool, you can enjoy them as you like, either on their own or stuffed with cold cuts, cheeses, and vegetables!
