- 2.1 oz parsley (fresh)
- 4 cloves red garlic (large)
- 1 tsp fine salt

Preparation of seasoned breadcrumbs for gratin always ready
Start by removing the waste parts from the parsley (i.e., the stems), wash it well under running water, then drain and pat it dry with absorbent kitchen paper, pat it until it is perfectly dry (this step is very important for making excellent seasoned breadcrumbs).
Clean the garlic cloves of the outer skin and leave them aside until ready to use.
Weigh the breadcrumbs (or stale bread) with the help of a bowl.
In the chopper’s cup, first add the parsley, then the breadcrumbs, and finally the salt and garlic, close and chop for 20 seconds. You should get a homogeneous mixture as seen in the picture. Once ready, pour it into a glass bowl and let it cool completely if it was slightly warm (which could happen with the use of some choppers).
After the breadcrumbs are completely cool, pour them into a freezer bag and place them in the freezer. Voila, seasoned breadcrumbs for gratin are ready to be used whenever you like!

You can use this breadcrumb mixture to season last-minute spaghetti. Simply toast it in a non-stick pan with two tablespoons of extra virgin olive oil and toss in the spaghetti.
IMPORTANT: It’s crucial to thoroughly pat dry the washed parsley. This step ensures that the seasoned breadcrumbs won’t form ice lumps once frozen!
