Ingredients for Simple Boiled Artichokes

  • 6 artichokes
  • 2 quarts water (for boiling)
  • 1 teaspoon coarse salt
  • 1 tablespoon extra virgin olive oil
  • 3 quarts water
  • 2 tablespoons lemon juice
  • 1/4 cup white wine
  • to taste parsley (fresh)
  • to taste red garlic
  • to taste smoked bacon (cubed)
  • to taste potatoes, peeled, cooked, boiled

Preparation for Simple Boiled Artichokes

  • First, clean the artichokes. Here’s how to do it: if you don’t want your hands to turn black, wear surgical gloves and you won’t have any problems.

  • Start by cutting the stem from the head of the artichoke. To clean the head, cut off a few inches from the tip of the leaves (keep cutting until you no longer see the points of the leaves), then remove all the outer tough leaves until you reach the heart of the artichoke.

  • Cut each artichoke head into 4 wedges (or 6 if they are very large) and soak them in a bowl previously prepared with water and lemon (this prevents the artichokes from darkening).

  • To clean the stems (which are delicious and should not be discarded!), remove all the tough outer filaments (like you do with cardoons), cut them into pieces about 4 inches long, and split each piece in half or into quarters (depending on their size), and immerse them in the bowl with water and lemon. Voila, the artichokes are now all cleaned and ready to be cooked!

  • Prepare a large pot so that all the artichokes (and their cleaned stems) fit comfortably, cover with plenty of water, add the teaspoon of coarse salt, and turn on the burner to high heat.

  • Once it boils, cook the artichokes for about 20/30 minutes (better to boil a few minutes longer than shorter). To check if they are done, a trick is: poke them with a fork or the tip of a knife, if it sinks easily, they are ready!

  • Once the boiled artichokes are cooked, drain them and season with a drizzle of olive oil, a pinch of salt, and freshly chopped parsley (also pepper if you like) and voila, you have a super tasty side dish ready in no time, as is or as an excellent base from which to start preparing other delights.

Advice and Variations

Once the simple boiled artichokes are ready, you can either eat them simply seasoned with oil and salt or, if you wish, sauté them in a pan for 8/10 minutes, adding 1/4 cup of white wine, a garlic clove, and some parsley, and they will be super tasty!

You can also enrich them with cubed and browned bacon.

Once boiled, you can also enrich them with boiled potatoes and toasted pine nuts, and season everything with parsley, salt, oil, and pepper.
