Simple Roasted Tomatoes

Simple and quick roasted tomatoes are one of the best side dishes, they prepare in just a few minutes and then off into the oven. Roasted tomatoes cooked this way pair perfectly with meat and fish but are also great for dressing pasta or stuffing focaccia or bruschetta, try them and you won’t let them go!

Ingredients for simple and quick roasted tomatoes

  • 6 ripe, fresh tomatoes (of the same size and for a total weight of about 2 lbs 10 oz)
  • 3.5 oz extra virgin olive oil
  • to taste fine salt
  • to taste mixed whole peppercorns (freshly ground)

Preparation of simple and delicious roasted tomatoes

  • Remove any stalk from the tomatoes and wash them well, dry and cut them in half, place the tomatoes in the tray with the cut side up, make cross cuts on the surface (2 in one direction and 2 in the other).

  • Salt the tomatoes, add freshly ground pepper (amount to your taste), with the help of a spoon pour the oil provided in the recipe over them.

  • Preheat the oven to 482°F and once it reaches the temperature, bake the tomatoes, cook for 55 minutes, after the first 50 minutes activate the grill function and continue cooking for additional minutes, halfway through cooking take out the tray briefly and with a spoon take the juice that has formed and spread it over the tomatoes again.

  • Once the simple roasted tomatoes are cooked, take them out and enjoy, excellent both hot and cold!

Notes

If you like, you can add finely chopped garlic and/or parsley to the seasoning, but add them halfway through cooking.

Once cooled, you can store the roasted tomatoes in the fridge for 2 days by putting them in an airtight container.
