  • Cost: Economical
  • Rest time: 9 Hours

  • Portions: One pan
  • Cooking methods: Electric oven
  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients for the Red Pizza Dough

  • 2 3/4 cups all-purpose flour
  • 3/4 cup water
  • 1 tbsp extra virgin olive oil
  • 1/2 packet dry yeast
  • 1 tsp fine salt
  • 1 pinch sugar
  • 5 oz tomato pulp
  • 1/2 tsp fine salt
  • 3 tbsp extra virgin olive oil
  • 1 tbsp dried oregano
  • Stand Mixer
  • Food Scale
  • Bowl
  • Plastic Wrap
  • Pastry Board
  • Baking Pan

Steps to Make the Recipe

  • In the bowl of the stand mixer, add the flour with the salt (I know it sounds strange, but trust me, I’ve tested this recipe for a year!), in a separate container mix the water, sugar, yeast, and oil.

  • Add the liquid mixture to the flour, turn on the stand mixer to speed 2 for 10 minutes. After 10 minutes, pour the dough onto the floured work surface, shape it into a ball, place it in a glass bowl, and cover with plastic wrap.

  • Let it rise in the turned-off and closed oven until it triples in volume.

  • Once the dough has tripled, pour it into the oiled pan, stretch it to the edges with your hands and let it rest in the fridge for another 2/3 hours.

  • After 2/3 hours, take the pan with the pizza out of the oven, preheat it to 450°F, and in the meantime, spread the dough, shaping it with your hands (at this point it will be super elastic and malleable), make holes on top with your fingers and season with the mix of tomato, oil, salt, and oregano or with oil, salt, and rosemary.

  • Bake and cook for about 30 minutes (always check the cooking because each oven is different, I remind you that I use a normal static electric oven), take out when the surface is golden brown and enjoy my red pizza in a pan!

Useful tips: you can freeze the red pizza in a pan once cold and always have it on hand in the freezer!
