Ingredients for the Soft Tart to Fill

  • 2 Eggs
  • 3/4 cups Sugar
  • 2 cups All-purpose flour
  • 1 packet Vanilla baking powder
  • 2 tbsps Olive oil
  • 1/4 cup Water

Preparation of the Soft Tart to Fill

  • In a bowl, work the eggs with the sugar (it takes just a few minutes, no need to mix them too much).

  • Add the oil and water and blend well into the egg and sugar mixture.

  • Now pour the flour and baking powder and mix from bottom to top with the spoon until you get a firm and lump-free dough (you can help yourself with a hand or electric whisk).

  • Oil and flour a smart cake mold (those which, when turned, have a space that will act as a container for the filling) with a diameter of 9.5 inches.

  • Pour the batter into the center of the pan and make sure it spreads evenly inside the mold.

  • Bake in a preheated oven at 392°F and bake for 25 minutes, always do the toothpick test because every oven is different!

TIPS on the Soft Tart to Fill

Before removing the Soft Tart to Fill from the mold, be sure to let it cool otherwise you risk breaking it.
For the filling, you can use creams, fruits, or creams and fruits together, I often fill it with banana, strawberries, and jam.
Once filled, store it in the fridge until it’s time to serve it.
