Ingredients for the Stuffed Calzone
- 1 roll puff pastry (round)
- 200 g cow's milk ricotta
- 180 g mushrooms in oil (drained weight)
- 130 g cooked ham (thin slices)
- 3 tablespoons breadcrumbs
- 1 pinch fine salt
- to taste mixed peppercorns (freshly ground)
- 1 tablespoon extra virgin olive oil
- 1 tablespoon milk
- to taste poppy seeds

Preparation of the Stuffed Calzone
In a bowl, pour the ricotta, ham, and finely chopped mushrooms, add salt and pepper, and mix well to combine the ingredients.
Roll out the puff pastry on a baking tray lined with parchment paper, prick half of the pastry with a fork, and sprinkle that half with breadcrumbs.
On the half where you spread the breadcrumbs, place the ricotta filling you prepared earlier, spreading it well with a spoon, leaving 1 cm (approximately 0.39 inches) from the edge free.
Fold the puff pastry over itself to form a half moon, seal all the edges by folding them over themselves from one side to the other, and make cuts on the surface.
Brush the surface with a mixture of oil and milk, sprinkle the poppy seeds, preheat the oven to 220°F (approximately 104°C) and bake for 30/35 minutes until the surface is well browned, then remove from the oven and enjoy!
