Ingredients for the Sugar-Free Apple Bundt Cake
- 5 eggs (XL size)
- 3 1/4 cups all-purpose flour
- 3/4 cup water
- 1/4 cup butter (plus extra for greasing the pan)
- 1/4 cup stevia
- 2 Royal Gala apples (about 14 oz peeled)
- lemon zest (grated)
- 1/2 lemon juice
- 1 packet baking powder

Preparation of the Sugar-Free Apple Bundt Cake
To start, melt the butter in a saucepan and once melted, let it cool.
Peel the apples, remove the core, and cut them into cubes. Put them in a bowl with the juice of half a lemon, mix and set aside.
In a bowl, pour the eggs and stevia and mix quickly with a spoon.
Add the melted and cooled butter, water, and grated lemon zest (I use a coarse grater) to the eggs. Mix well until all ingredients are combined.
Sift the baking powder with the flour, add them to the liquid mixture in the bowl and stir well with a spoon until you have a moderately thick, lump-free mixture (to make it easier, you can use electric beaters).
Add the apples to the batter, stirring until they are well incorporated.
Grease and flour the bundt cake pan, pour all the apple bundt batter inside with the help of a kitchen spatula. Tap the pan lightly to level the batter.
Preheat the oven to 392°F (200°C) and when it reaches temperature, bake the cake for 50 minutes. At the end of cooking, the apple bundt should be well browned. Towards the end of cooking, always do the toothpick test because ovens vary.
Once the sugar-free apple bundt cake is cooked, turn off the oven and let it cool in there with the door open. Once cooled, place it on a serving plate and enjoy its deliciousness!
