Sugar-Free Christmas Cookies

These delicious sugar-free Christmas cookies, spiced and aromatic, are perfect to make with kids! I made them sugar-free as I am diabetic and experiment with many sugar-free recipes, but I assure you that everyone at home loved them. During baking, they release a delightful aroma that will fill your entire house! You can also gift them at Christmas, they will be much appreciated like all homemade Christmas gifts!

Ingredients

  • 2 eggs (large size)
  • 10 tbsp butter
  • 2 1/2 cups low glycemic index flour
  • 1/3 cup stevia
  • 4 tsp ground cinnamon
  • 3 tsp unsweetened cocoa powder
  • 1 tsp ground ginger

Steps for Sugar-Free Christmas Cookies

  • Place the room temperature butter cut into pieces, eggs, and stevia into the bowl of your stand mixer. Attach the flat beater and run on speed 2 for 2 minutes.

  • Then, add the flour and spices to the mixer bowl, run the mixer again on speed 2 for 4 minutes, turn off, and transfer the dough onto your work surface. Shape it into a loaf, cover with plastic wrap, and let it rest in the fridge for 1 hour or in the freezer for 30 minutes.

  • After resting, take the loaf, roll it out with a rolling pin to a thickness of 1/8 to 3/16 inches, using a little flour if needed, cut circles 1 1/2 to 2 inches in diameter, re-knead the scraps, roll them out and cut them again until the dough is all used up. You should end up with 20 dough disks from this recipe.

  • Place the dough disks on a baking sheet lined with parchment paper, use the stamp to imprint the design on each cookie, preheat the electric oven to 392°F, and once hot, bake for 20-25 minutes. After baking, remove from the oven, let cool, and serve! Enjoy my sugar-free Christmas cookies!
