Ingredients for the Sugar-Free Coffee Cookies

  • 2 cups cups all-purpose flour
  • 1 cup cups butter (at room temperature)
  • 1/4 cup cups stevia
  • 1 egg (extra-large)
  • 1 short espresso coffee

Preparation of the Sugar-Free Coffee Cookies

  • In a bowl, work the butter at room temperature (cut into small pieces) and the stevia with the electric whisk for 2 minutes, then add the egg, the coffee (it must be cold, so prepare it before you start) and work for another 2 minutes with the whisk.

  • Now add the flour to the mixture and with the help of a spoon start to knead, when you see that it compacts, work it on the floured rolling board until you get a smooth and compact dough, wrap the dough in plastic wrap and let it rest in the fridge for at least 2 hours.

  • After the fridge rest, take the dough, roll it out on the floured rolling board to a thickness of 1/8 inch, then cut out the cookies with a stamp cutter (about 60 small ones) and place them on a baking tray with parchment paper.

  • Preheat the oven to 428°F and when it reaches the temperature, bake, cook for 14 minutes (towards the end of cooking always check because every oven is different from the other!), then remove from oven, let cool completely before enjoying and bon appétit!

Tips

If you need to fill 2 trays/baking tins, make two single bakes instead of a double, that way all the cookies will bake evenly!
