Ingredients for the Sugar-Free Lemon Pound Cake

  • 3 eggs (size XL)
  • 1/4 cup stevia (or 2/3 cup of sugar)
  • 2 tbsps extra virgin olive oil
  • 2 3/4 cups all-purpose flour
  • 3/4 cup water
  • 1 lemon zest (grated)
  • 1 packet baking powder

Preparation of the Sugar-Free Lemon Pound Cake

  • In a bowl, add the eggs, stevia, oil, and grated lemon zest, mix with a spoon, then add the water and combine it with the rest.

  • Sift the flour and baking powder together and add them to the liquid mixture, mix with a spoon until you get a soft, smooth, and lump-free mixture (it will take a few minutes).

  • Line the loaf pan with parchment paper, pour in the batter using a silicone spatula, level it, preheat the oven to 428°F.

  • Once the oven is hot, bake the pound cake and cook for 45 minutes, halfway through cover with parchment paper if the surface becomes too colored, before removing from the oven do the toothpick test, and if it comes out dry, it’s done!

  • Once cooked, remove the lemon pound cake from the oven, let it cool, remove it from the pan, and serve!
