Ingredients for the Sugar-Free Lemon Pound Cake
- 3 eggs (XL size)
- 1/4 cup stevia (or 1/2 cup sugar)
- 2 tbsps extra virgin olive oil
- 2 3/4 cups all-purpose flour
- 3/4 cup water
- 1 lemon zest (grated)
- 1 packet baking powder

Preparation of the Sugar-Free Lemon Pound Cake
In a bowl, pour in the eggs, stevia, oil, and grated lemon zest, mix with a spoon, then add the water and integrate it with the rest.
Sift together flour and baking powder and add them to the liquid mixture, mix with a spoon until you get a soft, smooth, and lump-free batter (it will take a few minutes).
Line the pound cake mold with parchment paper, pour in the batter with the help of a silicone spatula, level it, preheat the oven to 428°F.
Once the oven is hot, bake the pound cake and cook for 45 minutes, halfway through cover with parchment paper if the surface seems too colored, before removing from the oven, do the toothpick test, and if it comes out dry, it’s cooked!
Once cooked, take the lemon pound cake out of the oven, let it cool, remove it from the mold, and serve!
