The sugar-free low glycemic index bundt cake is one of those desserts I thought of for the breakfast and snack of those who want to watch their sugar intake and glycemia for health or personal pleasure. This bundt cake is made without sugar and with low glycemic index flour, it’s as soft as a cloud and while baking will fill your house with an amazing aroma! Once you taste it, you’ll never leave it, it’s plain white, but you can enrich it with nuts or pieces of dark chocolate or with a bit of unsweetened cocoa to make it marbled!

Ingredients for the Sugar-Free Low Glycemic Index Bundt Cake
- 4 eggs (XL size)
- 2.8 cups low glycemic index flour
- 2/3 cups plant-based milk (soy, almond, oat, or coconut, unsweetened)
- 5.6 oz coconut oil
- 2.1 oz stevia
- 1 packet baking powder for desserts
- 1 packet vanillin
- 1 pinch fine salt

Preparation of the Sugar-Free Bundt Cake
Pour the egg whites into one bowl and the yolks into another.
Melt the coconut oil in a small pot.
Add a pinch of salt to the bowl with the egg whites and beat them with an electric mixer until stiff peaks form, then set aside.
Add the stevia and coconut oil to the bowl with the yolks, and beat with the electric mixer for a few seconds, then add the plant-based milk of your choice and beat again for 2 minutes.
Add the flour, baking powder, and vanillin to the yolk bowl, and mix well with the mixer until well combined.
Now add the whipped egg whites to the other mixture and gently fold them in with a spatula, mixing from bottom to top.
Oil the bundt pan with coconut oil and flour it, shaking off the excess flour before pouring in the bundt cake batter.
Preheat the oven to 392°F (200°C), once hot, bake the sugar-free bundt cake for 35 minutes, always doing the toothpick test at the end of baking (every oven is different). Once baked, let it cool and enjoy!
Once cool, you can garnish it with powdered stevia.
TIPS
You can enrich the batter with citrus zest.
You can make muffins with this batter, just shorten the baking time by a few minutes.
