  • 1 1/2 cups low glycemic index flour
  • 1/2 cup water
  • 1 tbsp stevia
  • 2 tsps extra virgin olive oil
  • 1 egg (large size)
  • 1 tsp baking powder
  • 1 tsp grated lemon zest (optional)

Preparation of Sugar-Free Low Glycemic Index Donuts

  • In a bowl, put the egg, stevia, oil, water, and lemon zest (if you like), mix with a spoon until you get a frothy mixture; it takes just a few minutes.

  • In a separate bowl, mix flour and baking powder, sift them and add them mixing from the bottom up to the egg mixture, mix until you get a thick, lump-free and homogeneous mixture.

  • Lightly oil the donut mold by brushing it and flour it, distribute the mixture into the mold until finished, with these doses you get exactly 6 donuts.

  • Preheat the oven (static electric mode) to 392°F and once at temperature, bake the donuts, cook for 20 minutes, then remove from the oven, let cool, and remove the donuts from the mold, now they’re ready to be enjoyed!

  • Sugar-free low glycemic index donuts, soft and fluffy, are as delicious as classic donuts.

TIPS

If you want to make the sugar-free low glycemic index donuts even more delicious, you can blend a bit of stevia and cover them as if it were powdered sugar (those without diabetes issues can safely use powdered sugar instead).

Alternatively, you can create a delicious cream with unsweetened cocoa and enough water to form a thick sauce to drizzle over the donuts.

You can also simply sprinkle them with unsweetened cocoa.
