Ingredients for Sugar-free Oat Flour Cookies

  • 1 1/4 cups oat flour
  • 1/2 cup almond flour
  • 1/4 cup coconut oil
  • 3 tbsp stevia
  • 3 tbsp dark chocolate chips (sugar-free)
  • 1 egg (XL size)
  • 1 tsp baking powder
  • 1 pinch fine salt

Preparation of Sugar-free Oat Flour Cookies

  • In a bowl, pour the oat flour, almond flour, stevia, baking powder, salt, and chocolate chips, and quickly mix with your hands (of course, wearing appropriate gloves).

  • Place the coconut oil in a small saucepan and melt it over low heat; it will take just a few seconds. Then, turn it off and set it aside for a moment.

  • Pour the egg into the bowl with the dry ingredients, pour the coconut oil over, and wearing gloves, start kneading with your hands until you get a homogeneous dough.

  • Divide the dough into 7 equal parts, round them like small meatballs and place them on the baking sheet with parchment paper, slightly flattening the surface.

  • Preheat the oven to 350°F, once hot, bake and cook for 15 minutes, then remove from the oven, let them cool, and enjoy these delicious sugar-free oat flour cookies!

TIPS

If you want or need smaller portions, you can make 14 cookies, following the same procedure.

You can substitute the chocolate chips with an equal weight of toasted and chopped nuts (walnuts or almonds).

Store them in a paper bag like the ones for bread, obviously they won’t last long because they’re too delicious!
