These muffins are suitable for everyone, not just those who can’t consume sugar, and I assure you they’ll disappear in a flash! Ingredients for Sugar-free Reindeer Muffins

  • 2 3/4 cups all-purpose flour (Or low glycemic index flour)
  • 3 eggs (medium size)
  • 1/4 cup powdered stevia
  • 9 tbsp butter
  • 2/3 cup partially skimmed milk
  • 1 tsp unsweetened cocoa powder
  • 1/2 packet baking powder
  • 20 round mint candies (sugar-free)
  • 10 red gummy candies (sugar-free)
  • 20 pretzel-shaped pretzels
  • 5 tbsp hazelnut spread (sugar-free)
  • 1 black edible marker

Preparation of Sugar-free Reindeer Muffins

  • Start by slowly melting the butter and then letting it cool.

  • In a bowl, place the eggs and stevia and mix with a spoon for a few minutes, then gradually add the butter while continuing to mix until fully combined.

  • Add the room temperature milk to the egg mixture and mix until well combined.

  • In a separate bowl, mix the dry ingredients: flour, cocoa, and baking powder until homogeneous (sift them for a finer result).

  • Gradually add the dry ingredients to the semi-liquid mixture, stirring continuously until you obtain a thick and lump-free batter. Set aside briefly.

  • Prepare the disposable muffin molds by buttering and flouring them. Pour about 2 generous tablespoons of batter into each mold, place the molds on a baking tray (this will help prevent spilling them and make it easier to bake and remove from the oven).

  • Preheat the oven to 392°F (200°C) and once hot, bake the muffins for 20 minutes (perform the toothpick test towards the end of baking, as each oven is different). Once cooked, remove them from the oven and let them cool completely before unmolding.

  • Place the muffins on a serving tray, slightly trim the tip of each muffin to create a flat surface (enjoy the trimmings with milk for breakfast!), and spread half a tablespoon of sugar-free hazelnut spread on the surface of each muffin.

  • Now take the pretzels and place them at the back to create ears.

  • Take the mint candies and use the black edible marker to make dots in the center of each candy, positioning them in front of the pretzels.

  • Lastly, add the red nose to the reindeer with slight pressure; the eyes and nose will stick perfectly! And there you have it, the sugar-free reindeer muffins are ready to be enjoyed, served, or gifted!
